Ingredients
  

Truffle Base
  • 1 13.5 oz can chickpeas, drained and rinsed
  • 1/2 cup nut or seed butter (almond or cashew)
  • 1 cup vegan dark chocolate chips, melted
  • 1 cup vegan dark chocolate chips, melted (for coating)
  • 1 tbsp coconut oil
  • optional toppings: cacao nibs, goji berries, sprinkles, shredded coconut, nuts/seeds, freeze dried fruits

Method
 

Truffle Preparation
  1. Blend chickpeas and nut butter until smooth.
  2. Mix in melted dark chocolate chips until combined.
  3. Chill mixture in the fridge until firm enough to scoop.
  4. Scoop and roll into balls.
  5. Melt chocolate chips and coconut oil for coating.
  6. Dip truffles in chocolate mixture and place on parchment.
  7. Add optional toppings before the coating sets.
