Latke Mixture
  • 2 large Russet potatoes
  • 1 small onion
  • 1 whole egg
  • 1/4 cup all-purpose flour
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • Oil for frying
Poached Eggs
  • 4 eggs
  • 1 tbsp vinegar
Assembly
  • 1/2 cup hollandaise sauce
  • Fresh chives (optional)

Method
 

Preparation
  1. Grate the potatoes and onion, then squeeze out the excess moisture. Combine them in a bowl.
  2. Add the egg, flour, salt, and pepper to the potato mixture and mix well.
  3. Heat oil in a skillet. Drop spoonfuls of the mixture into the hot oil, flattening them slightly. Fry until golden brown.
  4. In a separate pot, add vinegar to simmering water and gently poach eggs for 3-4 minutes.
  5. Assemble by placing a latke on a plate, topping with a poached egg, and drizzling with hollandaise sauce.
