Ingredients
  

  • 4 large bell peppers
  • 1 pound ground beef or turkey
  • 1 cup full-fat cottage cheese
  • 1/2 cup shredded cheddar or Mexican-blend cheese
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro or parsley

Method
 

  1. Preheat oven to 375°F.
  2. Brown onion and garlic in olive oil.
  3. Cook ground meat until browned.
  4. Stir in tomato paste and seasonings.
  5. Mix in cottage cheese and half the shredded cheese.
  6. Fill peppers and top with remaining cheese.
  7. Bake covered for 30 minutes, uncover and bake for 10 to 15 minutes.
