Ingredients
  

Lamb Chops
  • 8 pieces lamb chops preferably rib or loin chops
  • 2 tablespoons olive oil for marinating
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder for flavor
  • 1 cup pomegranate juice freshly squeezed if possible
  • 1 tablespoon honey for sweetness
  • 1 tablespoon balsamic vinegar for acidity
Pomegranate Reduction
  • 1 cup pomegranate juice for reduction
  • 1 tablespoon honey optional, for sweetness
  • 1 teaspoon cornstarch mixed with water to thicken
Garnish
  • 1/4 cup pomegranate seeds for topping
  • 2 tablespoons fresh mint chopped, for garnish

Method
 

Marinate the Lamb
  1. In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, pomegranate juice, honey, and balsamic vinegar. Whisk until well blended.
  2. Add the lamb chops to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
Prepare the Pomegranate Reduction
  1. In a saucepan over medium heat, combine 1 cup of pomegranate juice and honey. Bring to a simmer and reduce to half, about 10 minutes.
  2. Mix cornstarch with a little water and add to the reduction to thicken. Stir until smooth and remove from heat.
Grill the Lamb Chops
  1. Preheat the grill to medium-high heat. Remove lamb chops from the marinade and discard the marinade.
  2. Grill the lamb chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (medium rare).
Serve
  1. Plate the lamb chops and drizzle with the pomegranate reduction. Garnish with pomegranate seeds and chopped mint.
  2. Serve immediately and enjoy your fancy pomegranate lamb chops!

Notes
