Marinate the Lamb
- In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, pomegranate juice, honey, and balsamic vinegar. Whisk until well blended.
- Add the lamb chops to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
Prepare the Pomegranate Reduction
- In a saucepan over medium heat, combine 1 cup of pomegranate juice and honey. Bring to a simmer and reduce to half, about 10 minutes.
- Mix cornstarch with a little water and add to the reduction to thicken. Stir until smooth and remove from heat.
Grill the Lamb Chops
- Preheat the grill to medium-high heat. Remove lamb chops from the marinade and discard the marinade.
- Grill the lamb chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (medium rare).
Serve
- Plate the lamb chops and drizzle with the pomegranate reduction. Garnish with pomegranate seeds and chopped mint.
