  • 3 large eggs
  • 1/3 cup maple syrup or honey
  • 2 tablespoons coconut oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla until smooth.

  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Pour batter into a greased cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool before slicing and serving.
