French Onion Ground Beef and Rice Casserole

Ingredients
  

Casserole Base
  • 1 lb ground beef preferably lean
  • 1 cup long-grain white rice uncooked
  • 1 can French onion soup 10.5 oz
  • 1 cup beef broth low sodium
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 tbsp olive oil for sautéing
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese such as Swiss or Gruyère

Method
 

Prepare the Beef and Onion Mixture
  1. In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté until they are translucent, about 5 minutes.
  2. Add minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spoon, about 8-10 minutes.
  3. Season with salt and pepper, then drain excess fat if necessary.
Combine Ingredients
  1. In a mixing bowl, combine the cooked beef and onion mixture with uncooked rice, French onion soup, and beef broth. Stir well to combine.
Bake the Casserole
  1. Preheat the oven to 350°F (175°C). Transfer the mixture to a greased casserole dish.
  2. Cover with aluminum foil and bake for 30 minutes.
  3. Remove the foil, sprinkle shredded cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Notes
