Pie Crust
  • 1 pre-made pie crust 9-inch, baked and cooled
Filling
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 4 ounces semi-sweet chocolate melted and cooled
Topping
  • 1 cup heavy whipping cream chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Filling
  1. In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract and melted chocolate until fully combined.
Assemble the Pie
  1. Pour the chocolate filling into the cooled pie crust, spreading it evenly.
  2. Refrigerate the pie for at least 4 hours or until set.
Prepare the Topping
  1. In a mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  2. Spread the whipped cream over the chilled pie.
  3. Garnish with chocolate shavings if desired.
