Method
Prepare the filling
- In a mixing bowl, combine the cream cheese, garlic powder, dried dill, salt, and black pepper. Mix until smooth.
- Add the chopped red bell pepper, cucumber, grated carrot, and spinach to the cream cheese mixture. Stir until well combined.
Assemble the roll ups
- Lay a tortilla flat on a clean surface. Spread a generous layer of the vegetable and cream cheese mixture over the entire surface of the tortilla.
- Starting from one edge, roll the tortilla tightly to form a log. Repeat with the remaining tortillas and filling.
Slice and serve
- Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Once chilled, remove the plastic wrap and slice each roll into 1-inch pieces. Arrange on a platter and serve.
