Ingredients
  

Vegetables
  • 1 cup Red bell pepper finely chopped
  • 1 cup Cucumber finely chopped
  • 1 cup Carrot grated
  • 1 cup Spinach fresh leaves
  • 1 cup Cream cheese softened
  • 4 pieces Flour tortillas 8-inch size
Seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried dill
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Method
 

Prepare the filling
  1. In a mixing bowl, combine the cream cheese, garlic powder, dried dill, salt, and black pepper. Mix until smooth.
  2. Add the chopped red bell pepper, cucumber, grated carrot, and spinach to the cream cheese mixture. Stir until well combined.
Assemble the roll ups
  1. Lay a tortilla flat on a clean surface. Spread a generous layer of the vegetable and cream cheese mixture over the entire surface of the tortilla.
  2. Starting from one edge, roll the tortilla tightly to form a log. Repeat with the remaining tortillas and filling.
Slice and serve
  1. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up.
  2. Once chilled, remove the plastic wrap and slice each roll into 1-inch pieces. Arrange on a platter and serve.

Notes
