Ingredients
  

Cheese & Eggs
  • 10 oz goat cheese
  • 2 large eggs
  • to taste kosher salt
  • to taste freshly ground black pepper
  • 2 cups panko bread crumbs
  • 1/2 cup vegetable oil
  • to taste flaky sea salt
Dressing
  • 1/3 cup extra-virgin olive oil
  • 1/2 unit lemon Juice of
  • 1 clove garlic minced
  • 2 Tbsp red wine vinegar
  • 2 tsp honey
Greens
  • 4 cups arugula or baby spinach packed

Method
 

Preparation
  1. Slice goat cheese into rounds.
  2. Beat eggs in a bowl. Season with salt and pepper.
  3. Coat cheese rounds in panko, dip in egg, then coat again in panko.
Cooking
  1. Heat oil in a skillet over medium heat. Fry cheese until golden brown, about 2-3 minutes each side.
Dressing & Serving
  1. In a bowl, whisk together olive oil, lemon juice, garlic, vinegar, honey, salt, and pepper.
  2. Toss arugula or spinach with dressing.
  3. Serve salad topped with fried goat cheese and sprinkle with flaky sea salt.
