Ingredients
  

For the Spaghetti Squash
  • 1 medium spaghetti squash halved and seeds removed
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Chicken Meatballs
  • 1 pound ground chicken
  • 1/4 cup parmesan cheese grated
  • 1/4 cup bread crumbs preferably whole wheat
  • 2 cloves garlic minced
  • 1 large egg beaten
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 4 tablespoons butter for garlic butter sauce
  • 2 cloves garlic minced for sauce
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Prepare the Spaghetti Squash
  1. Preheat the oven to 400°F (200°C).
  2. Drizzle the cut sides of the spaghetti squash with olive oil and season with salt and pepper.
  3. Place the squash cut side down on a baking sheet and roast for 30-35 minutes until tender.
Make the Chicken Meatballs
  1. In a mixing bowl, combine ground chicken, parmesan cheese, bread crumbs, minced garlic, egg, oregano, salt, and pepper.
  2. Mix until well combined and form into meatballs, about 1 inch in diameter.
  3. Heat a skillet over medium heat and melt 2 tablespoons of butter.
  4. Add the meatballs and cook for about 10-12 minutes, turning occasionally until golden brown and cooked through.
Prepare the Garlic Butter Sauce
  1. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic.
  2. Sauté for about 1-2 minutes until fragrant, then remove from heat.
Assemble the Dish
  1. Once the spaghetti squash is cooked, use a fork to scrape out the strands.
  2. Mix the spaghetti squash strands with the garlic butter sauce.
  3. Stuff the meatballs into the spaghetti squash halves and drizzle with any remaining garlic butter.
  4. Garnish with fresh parsley before serving.
