  • 4 pieces boneless, skinless chicken breasts
  • 1 lb baby red potatoes, halved or quartered if large
  • 1/3 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 5 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Cooking Instructions
  1. In a bowl, mix olive oil, lemon juice, Dijon mustard, basil, oregano, garlic, paprika, onion powder, salt, and pepper.
  2. Place chicken in the crockpot and pour the mixture over it.
  3. Add baby potatoes and stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. Sprinkle Parmesan cheese on top 30 minutes before serving.
  6. Garnish with fresh parsley before serving.
