Ingredients
  

Chicken Marinade
  • 4 pieces chicken breasts boneless, skinless
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon oregano dried
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 medium cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dill fresh or dried
  • 1/2 teaspoon salt
Couscous
  • 1 cup couscous uncooked
  • 1 cup chicken broth or water
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and black pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Prepare Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt until well combined. Refrigerate until ready to serve.
Cook Couscous
  1. In a pot, bring chicken broth to a boil. Stir in couscous, olive oil, and salt. Remove from heat, cover, and let sit for 5 minutes. Fluff with a fork before serving.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Grill marinated chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).
Serve
  1. Slice the grilled chicken and serve over couscous with a generous dollop of tzatziki sauce on the side.
