Ingredients
  

Fries
  • 4 large Russet potatoes peeled and cut into fries
  • 4 cups vegetable oil for frying
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Toppings
  • 1 cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon dried oregano or to taste
  • 2 tablespoons extra virgin olive oil for drizzling
  • 1 lemon juice freshly squeezed

Method
 

Prepare the Potatoes
  1. Peel the Russet potatoes and cut them into fries.
  2. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Fry the Potatoes
  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Drain the fries and pat them dry with paper towels.
  3. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.
  4. Remove the fries and drain on paper towels. Season with salt and pepper immediately.
Assemble the Dish
  1. Place the hot fries on a baking sheet.
  2. Sprinkle the crumbled feta cheese over the fries.
  3. Add chopped parsley and dried oregano on top.
  4. Drizzle with extra virgin olive oil and squeeze fresh lemon juice over the dish.
Serve
  1. Serve the Greek fries immediately while hot.

Notes
