Method
Prepare the Potatoes
- Peel the Russet potatoes and cut them into fries.
- Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Fry the Potatoes
- Heat the vegetable oil in a large pot over medium-high heat.
- Drain the fries and pat them dry with paper towels.
- Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.
- Remove the fries and drain on paper towels. Season with salt and pepper immediately.
Assemble the Dish
- Place the hot fries on a baking sheet.
- Sprinkle the crumbled feta cheese over the fries.
- Add chopped parsley and dried oregano on top.
- Drizzle with extra virgin olive oil and squeeze fresh lemon juice over the dish.
Serve
- Serve the Greek fries immediately while hot.
