Ingredients
  

  • 3 large very ripe bananas
  • 2 handfuls baby spinach
  • 3 tbsp milk
  • 1 egg
  • 0.5 cup sugar
  • 1 tsp vanilla
  • 0.5 cup Greek yogurt, full fat
  • 3 tbsp oil
  • 1 cup white whole wheat flour
  • 1 tsp baking soda
  • 0.67 cup cocoa powder
  • 0.25 tsp sea salt
  • 0.5 cup dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line muffin tin with liners or grease.
  3. Blend spinach, bananas, milk, egg, yogurt, and vanilla until smooth.
  4. In a bowl, whisk flour, cocoa powder, baking soda, and salt.
  5. Combine wet and dry ingredients, mixing until just combined.
  6. Fold in sugar, oil, and chocolate chips.
  7. Fill muffin tin 3/4 full and bake for 18-20 minutes.
  8. Cool in tin for 5 minutes, then transfer to wire rack.
