Ingredients
  

Vegetables
  • 1 medium Zucchini sliced
  • 1 medium Red Bell Pepper sliced
  • 1 medium Yellow Bell Pepper sliced
  • 1 cup Mushrooms sliced
  • 1 medium Red Onion sliced
Cheese
  • 2 cups Shredded Mozzarella Cheese
  • 1 cup Feta Cheese crumbled
Tortillas
  • 4 large Flour Tortillas
Seasoning
  • 2 tablespoons Olive Oil for grilling
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper to taste

Method
 

Prepare the Vegetables
  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, mushrooms, and red onion.
  3. Drizzle with olive oil, oregano, garlic powder, salt, and pepper. Toss to coat evenly.
Grill the Vegetables
  1. Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.
  2. Remove from the grill and set aside.
Assemble the Quesadillas
  1. Heat a skillet over medium heat.
  2. Place one tortilla in the skillet, sprinkle half with mozzarella cheese, add a portion of grilled vegetables, and top with feta cheese.
  3. Fold the tortilla in half and cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
  4. Repeat with remaining tortillas and filling.
Serve
  1. Cut the quesadillas into wedges and serve warm with your choice of salsa or sour cream.
