  • 1 bunch asparagus about 1 pound
  • 3 cloves garlic minced
Sauce
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Rinse shrimp under cold water and pat dry. Combine shrimp with olive oil, paprika, salt, and pepper. Marinate for 15 minutes.
  2. Blanch asparagus in boiling salted water for 2-3 minutes. Transfer to an ice bath, then drain.
Cooking
  1. Sauté minced garlic in olive oil until fragrant. Add heavy cream, bring to a simmer. Stir in lemon juice, Parmesan, salt, and pepper. Mix in blanched asparagus.
  2. Preheat grill. Cook marinated shrimp for 2-3 minutes on each side until pink.
  3. Assemble bowl with rice or quinoa, top with creamy asparagus sauce, and grilled shrimp.
