Ingredients
  

Steak and Zucchini
  • 1 lb flank steak or sirloin
  • 2 medium zucchini sliced lengthwise
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Creamy Sauce
  • 1 cup Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried dill or fresh if available
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Toppings
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1 cup fresh cilantro chopped

Method
 

Prepare the Steak and Zucchini
  1. Preheat the grill to medium-high heat.
  2. Rub the flank steak and zucchini slices with olive oil, salt, and black pepper.
  3. Place the steak on the grill and cook for about 5-7 minutes on each side for medium-rare, or until desired doneness.
  4. Grill the zucchini for about 3-4 minutes on each side until tender and grill marks appear.
Make the Creamy Sauce
  1. In a mixing bowl, combine Greek yogurt, mayonnaise, Dijon mustard, minced garlic, lemon juice, dill, salt, and pepper.
  2. Whisk until smooth and well combined.
Assemble the Bowl
  1. Slice the grilled steak against the grain and arrange it in bowls.
  2. Add grilled zucchini, cherry tomatoes, and avocado on top.
  3. Drizzle the creamy sauce over the top and garnish with fresh cilantro.
