Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts
  • 1 medium yellow onion sliced
  • 1 medium green bell pepper sliced
  • 1 medium red bell pepper sliced
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Cheese Sauce
  • 1 cup low-fat cream cheese softened
  • 1/2 cup low-fat shredded mozzarella cheese
  • 1/4 cup low-sodium chicken broth
Buns
  • 4 whole grain sub rolls

Method
 

Prepare the Chicken and Vegetables
  1. Place the chicken breasts in the crockpot.
  2. Add the sliced onion, green bell pepper, red bell pepper, minced garlic, Italian seasoning, salt, and black pepper on top of the chicken.
Cook the Mixture
  1. Cover and cook on low for 6 hours or on high for 3 hours until the chicken is cooked through and tender.
Make the Cheese Sauce
  1. In a bowl, mix the softened cream cheese, shredded mozzarella cheese, and chicken broth until smooth.
Combine and Serve
  1. Once the chicken is cooked, shred it with two forks and stir in the cheese sauce until well combined.
  2. Serve the mixture in whole grain sub rolls.
