Ingredients
  

For the Teriyaki Sauce
  • 1/4 cup soy sauce low sodium
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water
For the Rice Bowl
  • 1 cup brown rice uncooked
  • 1 pound ground turkey
  • 1 cup broccoli florets fresh or frozen
  • 1 carrot medium sliced
  • 1 bell pepper red sliced
  • 2 green onions chopped
  • 1 tablespoon olive oil for cooking

Method
 

Cook the Rice
  1. Rinse the brown rice under cold water until the water runs clear. Cook according to package instructions in a rice cooker or on the stovetop.
  2. Once cooked, fluff the rice with a fork and set aside.
Prepare the Teriyaki Sauce
  1. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and cornstarch mixture until well combined.
Cook the Turkey and Vegetables
  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 5-7 minutes.
  2. Add broccoli, carrot, and bell pepper to the skillet. Stir-fry for another 5 minutes until vegetables are tender.
  3. Pour the teriyaki sauce over the turkey and vegetables. Stir well to coat and cook for an additional 2-3 minutes until the sauce thickens.
Assemble the Bowls
  1. Divide the cooked brown rice among four bowls. Top with the turkey and vegetable mixture.
  2. Garnish with chopped green onions before serving.
