  • 2 ripe bananas mashed
  • 2 large eggs
  • 1 cup rolled oats soaked in 1 cup milk or dairy-free alternative
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • pinch of salt

Method
 

  1. In a mixing bowl, combine oats with 1 cup of milk (or dairy-free alternative) and let sit for 10 minutes.
  2. Mash the ripe bananas until smooth.
  3. Add mashed bananas, eggs, baking powder, vanilla, and salt to the oat mixture. Mix until combined.
  4. Preheat a non-stick skillet over medium heat and lightly grease if necessary.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.
  6. Serve warm with your choice of toppings.
