  • 2 large sweet potatoes peeled and diced
  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1/2 medium red onion thinly sliced
Cheese and Nuts
  • 1/4 cup feta cheese crumbled
  • 1/4 cup walnuts chopped
Dressing
  • 3 tablespoons olive oil divided
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Pepper to taste

Method
 

Making the Salad
  1. Preheat oven to 425°F (220°C). Peel and dice sweet potatoes into 1-inch cubes.
  2. Toss sweet potatoes with 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and walnuts.
  4. Whisk together remaining olive oil and balsamic vinegar for the dressing.
  5. Once sweet potatoes are roasted, let cool slightly. Add to salad base with feta cheese and drizzle dressing over. Toss gently.
  6. Serve warm or at room temperature.
