Baking Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix mashed sweet potato, almond butter, eggs, maple syrup, vanilla, and vinegar.
- In another bowl, whisk cocoa powder, baking soda, cinnamon, and salt.
- Combine wet and dry ingredients until just mixed.
- Pour batter into a greased 9-inch round cake pan.
- Bake for 25-30 minutes until a toothpick comes out clean.
- For ganache, heat coconut milk, chocolate chips, coconut oil, and salt until melted and smooth.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
- Once cooled, top with chocolate ganache.
