Ingredients
  

  • 1 cup mashed sweet potato
  • 1 cup unsweetened almond butter
  • 2 large eggs
  • cup pure maple syrup
  • 2 tsp pure vanilla extract
  • 1 tsp cider vinegar or lemon juice
  • cup cocoa powder
  • ¾ tsp baking soda
  • ½ tsp ground cinnamon optional
  • 1 tsp sea salt
  • ½ cup full-fat canned coconut milk
  • 1 cup chocolate chips
  • 1 tbsp coconut oil or butter
  • 1 pinch sea salt

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix mashed sweet potato, almond butter, eggs, maple syrup, vanilla, and vinegar.
  3. In another bowl, whisk cocoa powder, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour batter into a greased 9-inch round cake pan.
  6. Bake for 25-30 minutes until a toothpick comes out clean.
  7. For ganache, heat coconut milk, chocolate chips, coconut oil, and salt until melted and smooth.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
  9. Once cooled, top with chocolate ganache.
