  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1 cup Ricotta Cheese
  • 1/3 cup Grated Parmesan Cheese
  • 2 cups Fresh Spinach
  • 1/4 cup Fresh Basil
  • 1/4 cup Fresh Parsley
  • 1 teaspoon Garlic Powder
  • Salt to taste
  • Pepper to taste
  • 1 cup Marinara Sauce
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Crushed Red Pepper Flakes
  • Toothpicks or Kitchen Twine as needed

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts flat.
  3. In a bowl, mix ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, and pepper.
  4. Stuff the chicken with the mixture and secure with toothpicks.
  5. Heat olive oil in a pan and sear the chicken rolls until golden.
  6. Place in a baking dish, cover with marinara sauce, and bake for 25-30 minutes.
  7. Serve hot.
