Herby Ricotta Stuffed Peppers

Ingredients
  

Peppers
  • 4 whole Bell Peppers Any color
Ricotta Filling
  • 15 oz Ricotta Cheese Whole milk preferred
  • 1 cup Fresh Spinach Chopped
  • 1/2 cup Parmesan Cheese Grated
  • 1 tbsp Fresh Basil Chopped
  • 1 tbsp Fresh Parsley Chopped
  • 1 clove Garlic Minced
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
Topping
  • 1/2 cup Mozzarella Cheese Shredded

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Place the peppers upright in a baking dish.
Make the Filling
  1. In a mixing bowl, combine ricotta cheese, chopped spinach, grated Parmesan, chopped basil, chopped parsley, minced garlic, salt, and black pepper. Mix until well combined.
Stuff the Peppers
  1. Spoon the ricotta mixture into each bell pepper until filled.
Bake
  1. Sprinkle shredded mozzarella on top of each stuffed pepper.
  2. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
