Method
Prepare the Vegetables
- In a large pot, sauté the diced onion and minced garlic over medium heat until translucent, about 5 minutes.
- Add the broccoli florets and cook for another 5 minutes, stirring occasionally.
Add Liquids and Cook
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the broccoli is tender.
Blend the Soup
- Using a blender, carefully blend the soup until smooth. You can blend in batches if necessary.
Add Dairy and Protein
- Return the blended soup to the pot. Stir in the milk, shredded cheddar cheese, and cooked chicken. Heat over low until cheese is melted and soup is heated through.
Season and Serve
- Season with salt, black pepper, and paprika to taste. Serve hot, garnished with extra cheddar cheese if desired.
