Preparation
- Combine cottage cheese, egg, honey or maple syrup, and melted butter in a mixing bowl. Whisk until smooth.

- Add flour, baking powder, and a pinch of salt. Mix until just combined.

- Flour a clean surface and roll the dough into a rectangle about 1/4 inch thick.

- Mix cinnamon, brown sugar, and optional nuts or raisins. Spread evenly over the dough.

- Roll the dough into a tight log and slice into 1-inch thick rolls.

- Preheat oven to 350°F (175°C). Place rolls on a baking sheet and bake for 20-25 minutes.

- Allow to cool for a few minutes before serving.
