  • 2 Tbsp chopped sun-dried tomatoes

  • Kosher salt
  • Freshly ground black pepper
  • 4 (6-oz.) boneless, skinless chicken cutlets
  • 2 Tbsp all-purpose flour
  • 1 tsp Italian seasoning
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp unsalted butter
  • 2 cloves garlic finely chopped
  • 1/4 tsp crushed red pepper flakes

Method
 

  1. Season chicken with salt, pepper, and flour.
  2. Heat oil and butter in a skillet over medium-high heat. Sear chicken until golden brown, about 5-7 minutes per side.
  3. Remove chicken and add garlic, cooking until fragrant. Stir in broth, cream, cottage cheese, sun-dried tomatoes, tomato paste, Italian seasoning, and red pepper flakes. Simmer until thickened.
  4. Return chicken to skillet, spoon sauce over, and simmer for 2-3 minutes. Serve with extra Parmesan.
