Ingredients
  

Chicken and Orzo
  • 1 lb chicken breast diced
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 tablespoon olive oil for cooking
Vegetables and Seasoning
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 medium red onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Toppings
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Method
 

Cook the Chicken
  1. Heat olive oil in a skillet over medium heat. Add diced chicken breast and cook until browned and cooked through, about 7-10 minutes.
  2. Remove the chicken from the skillet and set aside.
Prepare the Orzo
  1. In a large pot, bring chicken broth to a boil. Add orzo pasta and cook according to package instructions, about 8-10 minutes.
  2. Drain any excess broth and set the orzo aside.
Combine Ingredients
  1. In the same skillet, add diced red onion and minced garlic. Sauté for 2-3 minutes until softened.
  2. Add cherry tomatoes and spinach, cooking until spinach wilts, about 2-3 minutes.
  3. Return the cooked chicken to the skillet, add the orzo, oregano, salt, and pepper. Stir to combine and heat through.
Serve
  1. Serve the orzo mixture topped with crumbled feta cheese and chopped parsley.
