Method
Prepare the Mixture
- In a mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract. Mix until smooth.
- In a separate bowl, mix together oats, protein powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until well combined.
Add Mix-ins
- Fold in the dark chocolate chips and chopped nuts (if using).
Form the Cups
- Spoon the mixture into a muffin tin, filling each cup about 3/4 full.
- Press down gently to compact the mixture.
Chill and Serve
- Place the muffin tin in the refrigerator for at least 1 hour to set.
- Once set, remove the cups from the tin and enjoy!
