Ingredients
  

Base Ingredients
  • 1 cup Greek yogurt plain or vanilla flavored
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup for vegan option
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup oats rolled oats
  • 1/2 cup protein powder vanilla or chocolate flavored
  • 1/4 teaspoon salt
Mix-ins
  • 1/2 cup dark chocolate chips or mini chocolate chips
  • 1/4 cup chopped nuts optional

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract. Mix until smooth.
  2. In a separate bowl, mix together oats, protein powder, and salt.
  3. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
Add Mix-ins
  1. Fold in the dark chocolate chips and chopped nuts (if using).
Form the Cups
  1. Spoon the mixture into a muffin tin, filling each cup about 3/4 full.
  2. Press down gently to compact the mixture.
Chill and Serve
  1. Place the muffin tin in the refrigerator for at least 1 hour to set.
  2. Once set, remove the cups from the tin and enjoy!
