Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 24 oz cream cheese softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
Topping
  • 1 cup whipped cream for serving
  • 1 tbsp ground cinnamon for garnish

Method

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

  2. Add sour cream, sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and cloves. Mix until fully combined and smooth.
Bake the Cheesecake

  2. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
Chill and Serve
  1. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
  2. Before serving, top with whipped cream and sprinkle with ground cinnamon.

Notes

For best results, let the cheesecake chill overnight before serving. This allows the flavors to meld beautifully.
