Ingredients
  

Shrimp
  • 1 pound large shrimp peeled and deveined
Honey Chipotle Sauce
  • 1/4 cup honey
  • 2 tablespoons chipotle in adobo minced
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon garlic powder
Taco Assembly
  • 8 small corn tortillas
  • 1 cup cabbage shredded
  • 1 avocado sliced
  • 1/2 cup cilantro chopped
  • 1/2 cup red onion thinly sliced
  • 1 lime cut into wedges

Method
 

Prepare the Sauce
  1. In a mixing bowl, combine honey, minced chipotle, lime juice, and garlic powder. Mix well.
Marinate the Shrimp
  1. Add the shrimp to the honey chipotle sauce and marinate for 10 minutes.
Cook the Shrimp
  1. Preheat the grill to medium-high heat. Grill the shrimp for 2-3 minutes on each side until cooked through.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Place grilled shrimp on each tortilla, then top with shredded cabbage, avocado slices, cilantro, and red onion.
  3. Serve with lime wedges on the side.
