Ingredients
  

Chicken and Marinade
  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 tablespoons soy sauce for marinating
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Hot Honey Sauce
  • 1/2 cup honey
  • 1 tablespoon hot sauce adjust to taste
  • 1 teaspoon apple cider vinegar
Bowl Components
  • 2 cups cooked rice white or brown
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup shredded carrots
  • 1 cup green onions sliced for garnish
  • 1/4 cup cilantro chopped for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine chicken thighs, soy sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well and let marinate for at least 15 minutes.
Cook the Chicken
  1. Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 8-10 minutes, or until fully cooked and browned, stirring occasionally.
Prepare Hot Honey Sauce
  1. In a small bowl, whisk together honey, hot sauce, and apple cider vinegar until well combined.
Assemble the Bowls
  1. In each serving bowl, layer cooked rice, followed by the cooked chicken, cherry tomatoes, cucumber, and shredded carrots. Drizzle hot honey sauce over the top.
  2. Garnish with sliced green onions and chopped cilantro before serving.
