Ingredients
  

Meat and Vegetables
  • 500 grams lean beef cut into cubes
  • 2 medium onions chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 1 medium red bell pepper chopped
  • 1 medium green bell pepper chopped
  • 2 tablespoons tomato purée
  • 1 liter beef stock low-sodium
Spices and Seasoning
  • 2 teaspoons paprika preferably Hungarian
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Ingredients
  1. Chop the onions, garlic, carrots, and bell peppers. Cut the beef into cubes.
  2. In a large pot, spray with low-calorie cooking spray and heat over medium heat.
Cook the Meat
  1. Add the beef to the pot and brown on all sides for about 5-7 minutes.
  2. Remove the beef and set aside.
Sauté the Vegetables
  1. In the same pot, add the onions and garlic, cooking until softened, about 5 minutes.
  2. Add the carrots and bell peppers, cooking for another 5 minutes.
Combine and Simmer
  1. Return the beef to the pot and stir in the tomato purée, paprika, caraway seeds, thyme, salt, and pepper.
  2. Pour in the beef stock and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 45-50 minutes until the beef is tender.
Serve
  1. Once cooked, taste and adjust seasoning if necessary.
  2. Serve hot, garnished with fresh parsley.
