Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats not instant
Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking soda, and salt. Gradually add to the creamed mixture.
  5. Stir in the oats until evenly mixed.
  6. Spread the mixture evenly into the prepared baking pan.
  7. Bake for 20-25 minutes or until the edges are golden brown. Let cool completely.
Make the Icing
  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  2. Spread the icing over the cooled cookie bars.
  3. Allow the icing to set before cutting into bars.
