Ingredients
  

Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • 1 cup red onion finely chopped
  • 1 cup romaine lettuce chopped
Cheese and Proteins
  • 1 cup mozzarella cheese cubed
  • 1/2 cup salami chopped
  • 1/2 cup pepperoni sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. Chop the cherry tomatoes, cucumber, red bell pepper, red onion, and romaine lettuce into bite-sized pieces.
  2. Place all chopped vegetables into a large mixing bowl.
Add Cheese and Proteins
  1. Add the cubed mozzarella cheese, chopped salami, and sliced pepperoni to the bowl with the vegetables.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
Combine Salad
  1. Pour the dressing over the salad and toss well to combine all ingredients.
  2. Serve immediately or refrigerate for up to 30 minutes before serving.
