  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup red bell pepper diced
  • 1 cup pomegranate seeds for garnish
Honey Mustard Dressing
  • 3 tablespoons honey preferably local
  • 2 tablespoons Dijon mustard
  • 3 tablespoons apple cider vinegar
  • 1/4 cup olive oil extra virgin

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, and red bell pepper.
  2. Toss the salad ingredients gently to mix well.
Make the Dressing

Combine and Serve
