Ingredients
  

  • 2 cups gnocchi
  • 8 oz smoked salmon
  • 1 cup heavy cream
  • 3.5 oz fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian herbs
  • 1/4 tsp crushed red pepper
  • 1 cup water
  • Salt and pepper to taste
  • 2 tbsp tomato puree

Method
 

  1. Boil salted water in a large pot. Add gnocchi and cook until they float, about 2-3 minutes. Remove and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant. Add spinach and cook until wilted.
  3. Pour in heavy cream and bring to a simmer. Stir in Italian herbs, crushed red pepper, and tomato puree. Cook until thickened.
  4. Fold in smoked salmon and warm through for 2 minutes.
  5. Combine gnocchi with the sauce. Add Parmesan and season with salt and pepper.
  6. Serve immediately, garnished with extra Parmesan and herbs if desired.
