  • 1/3 cup keto-friendly sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
Wet Ingredients
  • 1/3 cup melted butter
  • 1/3 cup unsweetened almond milk
  • 3 large eggs
  • 1 tsp pure vanilla extract

  • 2/3 cup fresh blueberries
  • Zest of 1/2 lemon optional

Method
 

Baking Instructions
  1. Preheat oven to 350°F (175°C).
  2. Prepare muffin tin with liners.
  3. In a bowl, whisk together almond flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk eggs, melted butter, almond milk, and vanilla until smooth.
  5. Combine wet and dry mixtures; stir until just combined.
  6. Fold in blueberries and lemon zest.
  7. Fill muffin cups 3/4 full with batter.
  8. Bake for 18-20 minutes until golden and a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack.
