Ingredients
  

Chicken Salad Base
  • 2 cups cooked chicken shredded or diced
  • 1 cup cottage cheese full-fat preferred
  • 1 cup jalapenos fresh or pickled, diced
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup green onions sliced
  • 1 tbsp olive oil optional for extra creaminess
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

Prepare the Ingredients
  1. Shred or dice the cooked chicken and place it in a mixing bowl.
  2. Dice the jalapenos and slice the green onions.
Mix the Salad
  1. Add the cottage cheese, shredded cheddar cheese, jalapenos, green onions, olive oil, garlic powder, onion powder, salt, and black pepper to the mixing bowl.
  2. Stir everything together until well combined.
Serve
  1. Taste and adjust seasoning if necessary.
  2. Serve chilled or at room temperature.
