  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or monk fruit sweetener
  • 1 tsp baking powder
  • 1/4 tsp xanthan gum optional
  • 1/4 cup unsalted butter melted
  • 1/2 tsp vanilla extract
Cream Cheese Filling
  • 8 oz cream cheese softened
  • 1 large egg
  • 2 tbsp granulated sweetener adjust to taste
  • 1/2 tsp vanilla extract
Strawberries
  • 2 cups fresh strawberries sliced
  • 1/4 cup granulated sweetener

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix the cobbler base ingredients until combined.
  3. In another bowl, beat the cream cheese filling ingredients until smooth.
  4. In a separate bowl, toss strawberries with sweetener and let sit.
  5. Spread half of the cobbler batter in a greased baking dish.
  6. Layer the strawberries on top, then dollop the cream cheese mixture over the strawberries.
  7. Spread the remaining cobbler batter on top.
  8. Bake for 30-35 minutes until golden and set.
  9. Cool for 10-15 minutes before serving.
