Lasagna Roll Ups

Delicious lasagna noodles rolled up with a cheesy filling and baked in marinara sauce.

Ingredients
  

Pasta
  • 12 oz lasagna noodles cooked and drained
Cheese Filling
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese plus extra for topping
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Sauce
  • 2 cups marinara sauce store-bought or homemade

Method
 

Prepare the Noodles
  1. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. Preheat the oven to 375°F (190°C).
Make the Filling
  1. In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix until well combined.
Assemble the Roll Ups
  1. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  2. Take a lasagna noodle and spread about 2 tablespoons of the cheese filling along the length of the noodle.
  3. Roll the noodle up tightly and place it seam-side down in the baking dish. Repeat with remaining noodles.
  4. Pour the remaining marinara sauce over the rolled noodles and sprinkle with extra mozzarella cheese.
Bake
  1. Cover the baking dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the lasagna roll ups cool for a few minutes before serving. Enjoy!

Notes

You can add cooked ground beef or sausage to the cheese filling for added protein.
