Ingredients

Pizza Dough
  • 2 cups all-purpose flour plus extra for dusting
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 3/4 cup warm water about 110°F
  • 1 tablespoon olive oil
Lemon Sauce
  • 1/2 cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 1 teaspoon honey or sugar
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
Toppings
  • 1 cup mozzarella cheese shredded
  • 1/4 cup feta cheese crumbled
  • 1 cup fresh arugula for topping
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon fresh basil chopped

Method

Prepare the Dough
  1. In a mixing bowl, combine flour, yeast, and salt. Add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
Make the Lemon Sauce
  1. In a bowl, whisk together lemon juice, lemon zest, honey, garlic powder, and salt until well combined.
Assemble the Pizza
  1. Preheat the oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
  2. Roll out the dough on a floured surface to your desired thickness. Transfer to a parchment-lined pizza peel or baking sheet.
  3. Spread the lemon sauce evenly over the dough. Sprinkle mozzarella and feta cheese on top.
  4. Carefully transfer the pizza to the preheated stone or baking sheet. Bake for 12-15 minutes until the crust is golden and cheese is bubbly.
Finish and Serve
  1. Remove the pizza from the oven and let it cool slightly. Top with fresh arugula, drizzle with olive oil, and sprinkle with basil.
  2. Slice and serve warm.
