Ingredients
  

Rice Base
  • 1 cup long-grain rice such as basmati or jasmine
  • 2 cups vegetable broth or water for cooking rice
Flavoring
  • 1 medium lemon juiced and zested
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. This removes excess starch.
  2. In a medium saucepan, combine the rinsed rice and vegetable broth. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
Flavor the Rice
  1. Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  2. Fluff the rice with a fork and stir in the lemon juice, lemon zest, olive oil, salt, black pepper, and chopped parsley.
  3. Taste and adjust seasoning if necessary, then serve warm.
