Method
 

  1. Wash and slice eggplant into ½-inch rounds.
  2. Sprinkle salt on eggplant and let sit for 30 minutes.
  3. Rinse and dry the eggplant slices.
  4. Mix olive oil, garlic powder, onion powder, smoked paprika, rosemary, salt, and pepper in a bowl.
  5. Toss eggplant in the mixture until coated.
  6. Preheat air fryer to 375°F. Place eggplant in a single layer and air fry for 15-20 minutes, flipping halfway.
  7. Serve warm, garnished with fresh herbs if desired.
