- Preheat oven to 350°F (175°C).
- Line muffin tin with parchment paper or grease lightly.
- In a bowl, whisk together almond flour, protein powder, baking powder, and salt.
- In another bowl, whisk eggs, applesauce, and vanilla until combined.
- Combine wet and dry ingredients, stirring gently.
- Fold in chopped strawberries.
- Spoon batter into muffin tin, filling each cup 3/4 full.
- Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
- Cool in tin for 10 minutes, then transfer to a wire rack.
