Ingredients
  

  • 1 cup almond flour
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 tablespoon erythritol optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line muffin tin with parchment paper or grease lightly.
  3. In a bowl, whisk together almond flour, protein powder, baking powder, and salt.
  4. In another bowl, whisk eggs, applesauce, and vanilla until combined.
  5. Combine wet and dry ingredients, stirring gently.
  6. Fold in chopped strawberries.
  7. Spoon batter into muffin tin, filling each cup 3/4 full.
  8. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  9. Cool in tin for 10 minutes, then transfer to a wire rack.
