Ingredients
  

Chicken Marinade
  • 4 pieces chicken breasts boneless and skinless
  • 1 cup mango puree fresh or canned
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon honey optional for sweetness
  • 1 teaspoon chili powder adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish
  • 1 cup fresh cilantro chopped
  • 1 medium mango diced
  • 1 medium red onion finely chopped
  • 1 medium lime cut into wedges

Method
 

Marinate Chicken
  1. In a mixing bowl, combine mango puree, lime juice, honey, chili powder, garlic powder, salt, and black pepper. Mix well.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Grill Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the grill and let it rest for a few minutes.
  2. Slice the chicken and serve it topped with diced mango, chopped cilantro, and red onion. Serve with lime wedges on the side.

Notes
