Ingredients
  

  • 2 fillets salmon 6 ounces each
  • 1 ripe mango peeled and diced
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1 tablespoon fresh ginger grated
  • 2 cloves garlic minced
  • 1 green onion sliced
  • sesame seeds for garnish

Method
 

  1. Peel and dice the mango. Grate the ginger and mince the garlic. Pat salmon dry.
  2. Heat olive oil in a large frying pan over medium-high heat.
  3. Place salmon skin-side down in the pan. Cook for 4-5 minutes until skin is crispy.
  4. Flip the fillets and add garlic and ginger. Sauté for 1 minute.
  5. Pour teriyaki sauce over salmon and cook for 2-3 minutes, spooning sauce over fish.
  6. Fold in diced mango and warm for another minute.
  7. Remove from heat, serve salmon topped with sauce, green onions, and sesame seeds.
