Ingredients
  

Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup red onion thinly sliced
  • 1 cup zucchini sliced
Marinade
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Garnish
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled

Method
 

Prepare the Vegetables
  1. Wash and chop all the vegetables as indicated in the ingredients list.
  2. Place the chopped vegetables in a large mixing bowl.
Make the Marinade
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and black pepper.
Combine and Marinate
  1. Pour the marinade over the vegetables in the mixing bowl.
  2. Toss the vegetables gently to ensure they are evenly coated with the marinade.
  3. Cover the bowl and refrigerate for at least 40 minutes to allow the flavors to meld.
Serve
  1. Before serving, sprinkle the salad with chopped parsley and crumbled feta cheese.
  2. Serve chilled or at room temperature.
