Ingredients
  

  • 2 pounds small yellow or russet potatoes
  • 1 tablespoon salt for boiling water
  • ¼ cup red onion, chopped
  • ¼ cup Kalamata olives, chopped
  • ¼ cup parsley, chopped
  • ¼ cup cilantro, chopped
  • 2-3 green onions, thinly sliced
  • cup fresh lemon juice
  • ¼ cup extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Boil potatoes in salted water until tender. Drain and let cool.
