Ingredients
  

Chicken and Orzo
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup orzo pasta uncooked
  • 2 cups chicken broth low-sodium
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 medium red onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil for cooking

Method
 

Cook the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
  2. Add the chicken pieces to the skillet, season with salt, pepper, oregano, and basil. Cook for about 5-7 minutes until the chicken is browned and cooked through.
Add Garlic and Vegetables
  1. Stir in the minced garlic and cook for 1 minute until fragrant.
  2. Add the halved cherry tomatoes and fresh spinach, cooking until the spinach wilts, about 2-3 minutes.
Cook the Orzo
  1. Pour in the chicken broth and bring to a boil.
  2. Add the orzo pasta, reduce heat to low, cover, and simmer for about 10-12 minutes until the orzo is tender and the liquid is absorbed.
Serve
  1. Remove from heat and let sit for a few minutes. Fluff with a fork and serve warm.
