Method
Cook the Chicken
- Heat olive oil in a large skillet over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
- Add the chicken pieces to the skillet, season with salt, pepper, oregano, and basil. Cook for about 5-7 minutes until the chicken is browned and cooked through.
Add Garlic and Vegetables
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the halved cherry tomatoes and fresh spinach, cooking until the spinach wilts, about 2-3 minutes.
Cook the Orzo
- Pour in the chicken broth and bring to a boil.
- Add the orzo pasta, reduce heat to low, cover, and simmer for about 10-12 minutes until the orzo is tender and the liquid is absorbed.
Serve
- Remove from heat and let sit for a few minutes. Fluff with a fork and serve warm.
